Yogurt Pots with Fruit, Granola and Strawberry Coulis
- 1 cup Strawberries
- ¼ cup Water
- 1 TBSP Sugar
- ¼ tsp Lemon juice
- 1 cup Greek yogurt or your choice
- ½ cup Mixed fresh fruit such as berries, banana, or kiwi
- ½ cup Granola
- 1 TBSP Honey optional
Coffee
- Coffee brewed to your liking
- Your choice of sweetener optional
- Your choice of creamer optional
Instructions
- Prepare the Strawberry Coulis: In a small saucepan, combine strawberries, sugar, and water. Cook over medium heat for 3–4 minutes, stirring occasionally, until the strawberries soften and release their juices.
- Mash with a fork or blend for a smoother texture. Stir in lemon juice and let cool.
- Prepare the Yogurt Mixture: In a bowl, mix Greek yogurt with honey (if desired) until smooth. Adjust to taste.
- Assemble the Yogurt Pots: Divide yogurt evenly between two serving glasses or bowls.
- Top with mixed fresh fruit, such as berries, banana slices, or kiwi. Sprinkle granola over the fruit and yogurt. Drizzle the cooled strawberry coulis on top.
- Brew the Coffee: While assembling the yogurt pots, brew coffee using your preferred method. Add sweetener and creamer if desired.
- Serve: Enjoy the yogurt pots alongside freshly brewed coffee.
