Wilted Kale Mushroom Salad

Ingredients

  • 4 cups Kale chopped
  • 2 tbsp Extra-virgin olive oil
  • 1 cup Mushrooms sliced

Dressing

  • 2 tsp Extra-virgin olive oil
  • 1 tsp Apple cider vinegar
  • 1 tsp Dijon mustard

Instructions

  • Pull the kale leaves off from the tough stems and discard the stems. Chop the kale into small pieces.
  • In a bowl, whisk together the ingredients for the dressing.
  • Heat the oil in a sauté pan over medium heat. Add the mushrooms and sauté until soft. Add the kale and sauté until it wilts.
  • Remove from the heat. Toss with the dressing. Taste and adjust the seasoning with salt and pepper before serving.
