Ingredients
- 4 cups Kale chopped
- 2 tbsp Extra-virgin olive oil
- 1 cup Mushrooms sliced
Dressing
- 2 tsp Extra-virgin olive oil
- 1 tsp Apple cider vinegar
- 1 tsp Dijon mustard
Instructions
- Pull the kale leaves off from the tough stems and discard the stems. Chop the kale into small pieces.
- In a bowl, whisk together the ingredients for the dressing.
- Heat the oil in a sauté pan over medium heat. Add the mushrooms and sauté until soft. Add the kale and sauté until it wilts.
- Remove from the heat. Toss with the dressing. Taste and adjust the seasoning with salt and pepper before serving.
