Instructions
Pull the kale leaves off from the tough stems and discard the stems. Chop the kale into small pieces.
In a bowl, whisk together the ingredients for the dressing.
Heat the oil in a sauté pan over medium heat. Add the mushrooms and sauté until soft. Add the kale and sauté until it wilts.
Remove from the heat. Toss with the dressing. Taste and adjust the seasoning with salt and pepper before serving.
