Ingredients
- 2 tbsp Extra-virgin olive oil
- 1 tbsp Red onion diced
- 2 cloves Garlic minced
- 1/2 lb Ground turkey
- 1/2 tbsp Chili powder use more if you like it spicy
- 1/2 tbsp Ground cumin
- 2 tsp All-purpose flour
- 2 cups Chicken broth
- 1/3 cup Corn
- 1/2 cup White beans rinsed and drained
- 1/4 cup Cheddar cheese shredded
- 2 tbsp Fresh cilantro garnish
- 1/4 Fresno Chili Peppers sliced (optional)
- 1 oz Tortilla chips
Instructions
- Heat the oil in a pot over medium heat. Once hot, saute the onion and garlic until golden brown. Crumble in the ground turkey, chili powder, and cumin; breaking the chicken up into smaller pieces. Stir in the flour, and mix everything together. Adjust the spices as needed and season with salt and pepper.
- Add the broth, corn, beans, salt and pepper. Simmer for about 25 minutes covered with a lid.
- Taste and adjust the seasoning with salt and pepper. Once it is very flavorful remove from the heat. Garnish with cheese, cilantro, and chili's (if using). Serve with tortilla chips.
