Ingredients

  • 2 cups Eggplant diced into bite sized pieces
  • 2 tbsp Extra-virgin olive oil
  • 1 tsp Dried oregano
  • 2 cups Tomatoes
  • 2 cloves Garlic cut into chunks
  • 2 tbsp Fresh basil chopped

Instructions

  • Preheat the oven broiler on high.
  • Line a baking sheet with foil. Place the eggplant on the baking sheet and toss with oil, oregano, and season well with salt and pepper.
  • Place underneath the broiler for about 5 minutes to get a nice golden brown color.
  • Add the tomato and garlic to the eggplant and toss. Season with salt and pepper.
  • Place back underneath the broiler for 5 - 7 minutes until the eggplant and tomatoes both have a roasted golden brown color.
  • Remove from the oven, toss with basil, adjust the seasonings with salt and pepper if needed before serving.
