Eggplant
diced into bite sized pieces

Extra-virgin olive oil

Dried oregano

Tomatoes

Garlic
cut into chunks

Instructions
Preheat the oven broiler on high.
Line a baking sheet with foil. Place the eggplant on the baking sheet and toss with oil, oregano, and season well with salt and pepper.
Place underneath the broiler for about 5 minutes to get a nice golden brown color.
Add the tomato and garlic to the eggplant and toss. Season with salt and pepper.
Place back underneath the broiler for 5 - 7 minutes until the eggplant and tomatoes both have a roasted golden brown color.
Remove from the oven, toss with basil, adjust the seasonings with salt and pepper if needed before serving.
