Ingredients

  • Nonstick spray
  • 4 tbsp Yellow mustard more if desired
  • 4 Sub rolls cut in half, about 6 inch piece per portion
  • 2 cups Baby spinach
  • 12 oz Deli turkey breast
  • 1/2 cup Sun dried tomatoes sliced
  • 1/2 cup Pepperoncini sliced
  • 1/2 cup Cheddar cheese shredded
  • 1/3 cup Red onion
  • 4 Pickle spears
  • 2 oz Potato chips

Instructions

  • Preheat a panini style grill. Lightly grease it with nonstick spray.
  • Spread the mustard onto the bread. Layer with spinach, turkey, sun dried tomato, pepperoncini, cheese, and red onion.
  • Cook on the panini grill until golden brown and the cheese is melted.
    (Alternatively place on a baking sheet and cook in a 350 degree oven using a heavy oven safe skillet or pan to press the sandwich down until the cheese is melted and the sandwich is crispy).
  • Cut in half and serve with pickles and chips.
