Ingredients

Turkey and Swiss Cheese Sandwich with Avocado and Arugula

  • 4 slices Whole wheat bread
  • Mayonnaise to taste
  • 1 cup Baby spinach
  • 1 cup Arugula
  • 4 slices Tomato
  • Extra-virgin olive oil
  • Salt to taste
  • Black pepper to taste
  • Dried oregano to taste
  • ¼ cup Pepperoncini sliced (to taste)
  • ½ Cucumber thinly sliced
  • 6-8 slices Deli turkey breast
  • ¼ cup Red onion thinly sliced
  • 1 Avocado sliced
  • 4 slices Swiss cheese
  • 1 cup Carrot peeled and cut into 3-inch-long sticks
  • ½ cup Ranch dressing

Lemon Sparkling Water

  • 24 oz Sparkling water cold
  • 1 Lemon sliced
  • Ice cubes

Instructions

  • Prep ingredients per the instructions above.
  • Lay out the slices of whole wheat bread on a clean surface.
  • Spread a generous layer of mayo onto each slice of bread
  • Layer the bread with spinach, arugula, tomato drizzled with oil and seasoned with salt pepper and oregano, cucumber, pepperoncini, turkey, red onion, avocado, and cheese. Top with remaining slice of bread. Cut in half.
  • Mix the ingredients for the lemon sparkling water.
  • Serve sandwich with carrots, ranch, and lemon sparkling water.
