Ingredients
- 2 large Whole grain wrap
- 4 TBSP Hummus
- 2 cups Spring mix
- 4 slices Tomato
- 1/2 cup Carrots cut into matchsticks
- 1/2 cup Cucumber cut into matchsticks
- 1/2 cup Red bell pepper cut into matchsticks
- 2 TBSP Red onion minced
- 8 oz Chunk light tuna fish drained
- 2 oz BBQ potato chips
- 2 Pickle spears
Lemon Spritzer
- 16 oz Sparkling water cold
- 6 slices Lemon
Instructions
- Place your wraps on a flat surface. Spread hummus around the center of the wrap.
- Place the mixed greens closer to the edge of one side of each wrap, and top with the tomato slices, carrots, cucumbers, bell peppers, and onions, dividing everything between each wrap evenly. Top the vegetables with the tuna.
- Fold the sides of the wrap and roll up tightly.
- Mix the sparkling water with lemon slices. Serve over ice if desired.
- Cut in half and serve with chips, pickle, and lemon spritzer.
Notes
Tip: If you’re packing this as a lunch, you can secure your wrap further by wrapping it with parchment to ensure none of the folded ends untuck themselves.
