Truffle Shoestring Fries

Equipment

Ingredients

  • 3 cups Vegetable oil
  • 2 Potatoes peeled and cut into very thin matchsticks
  • 1 to 2 tsp White Truffle Oil

Instructions

  • Preheat the oil in a pot on medium heat to 350 degrees.
  • Cut the potatoes into very thin matchstick strips and soak them in cold water for 5 minutes. Drain the water and pat them dry with a paper towel.
  • Fry the potato sticks in batches in the oil until deep golden brown. Place on a paper towel lined sheet to drain the excess oil and season with salt and pepper right away.
  • Toss well with truffle oil and serve.

Notes

Pro Tips - Truffle oil is very potent, use a little at a time and taste to make sure you are not overpowering the fries.
