Tomato Cabbage Soup

Ingredients

  • 1 tbsp Extra-virgin olive oil
  • 2 tbsp Onion chopped small
  • 2 tbsp Celery chopped small, plus the leaves for garnish
  • 2 cloves Garlic minced
  • 2 cups Savoy Cabbage shredded
  • 1/2 cups Fire roasted tomatoes
  • 2 cups Chicken broth use more if needed
  • 1/2 tsp Dried oregano
  • 1/4 tsp Fresh thyme minced
  • 4 Crackers
  • Fresh parsley garnish

Instructions

  • Heat a pot over medium heat. Once hot, add the oil. Saute the onion, celery, and garlic until softened. Then add the cabbage and sauté until it starts to wilt.
  • Stir in the tomatoes, broth, oregano, and thyme.
  • Season with salt and pepper to taste and bring to a simmer, stirring occasionally, to build flavor. Once the soup is flavorful. Season with salt and pepper to taste.
  • Serve with crackers and garnish with parsley.
