Ingredients

  • 2 tsp Extra-virgin olive oil
  • 3/4 lb Ground turkey
  • 1/2 tsp Ground cumin
  • 1/2 tsp Garlic powder
  • 1 tsp Paprika
  • 1 tsp Chili powder
  • 1/4 cup Water
  • 1 cup Black beans drained and rinsed
  • 3 oz Tortilla chips
  • 6 cups Romaine lettuce chopped
  • 1/4 cup Red onion diced
  • 1/2 cup Tomato diced
  • 1/4 cup Cheddar cheese shredded
  • 4 tsp Sour cream
  • 1 Avocados pitted and diced
  • Hot sauce optional

Instructions

  • Heat a nonstick pan over medium heat. Once hot, add the oil. Brown the ground turkey along with the cumin, garlic powder, paprika, and chili powder. Break up the turkey into smaller pieces using a spatula. Add the water and beans, bring to a simmer so the flavors all blend together. Season with salt and pepper to taste.
  • Arrange the tortilla chips and lettuce on a plate, topped with ground turkey, onions, tomatoes, cheddar cheese, sour cream, and avocado. Drizzle with hot sauce if desired.
