Ingredients

Salad

  • 2 tsp Extra-virgin olive oil
  • 8 oz Ground beef
  • 1/4 tsp Ground cumin
  • 1/4 tsp Garlic powder
  • 1/2 tsp Paprika
  • 1/4 tsp Chili powder
  • 1/2 cup Black beans drained and rinsed
  • 4 cups Romaine lettuce chopped
  • 2 oz Tortilla chips
  • 1 Avocados pitted and diced
  • 1/4 cup Red onion diced
  • 1/3 cup Tomato diced
  • 1/3 cup Corn thawed completely
  • 1/3 cup Colby cheese shredded
  • 1/2 TBSP Fresh cilantro chopped
  • Jalapeño pepper sliced for garnish
  • 4 TBSP Sour cream optional

Mint Fresca

  • 12 oz Lemonade cold
  • 12 oz Sparkling water cold
  • 2 tsp Sugar
  • 1 TBSP Fresh mint chopped

Instructions

  • Prep the ingredients per the instructions above.
  • Heat a nonstick pan over medium heat. Once hot, add the oil. Brown the ground beef along with the cumin, garlic powder, paprika, and chili powder, breaking it up into smaller pieces using a spatula. Add the beans; and saute until the flavors all blend together. Season with salt and pepper to taste.
  • Mix together the ingredients for the mint fresca. Add sugar to taste your preference. Serve over ice if desired.
  • Arrange the lettuce on a plate, topped with ground beef, tortilla chips, avocado, onions, tomatoes, corn, cheese, and cilantro. Squirt some lime over top (optional). Garnish with jalapeño and sour cream (if using). Enjoy with mint fresca.
