Heat a nonstick pan over medium heat. Once hot, add the oil. Brown the ground beef along with the cumin, garlic powder, paprika, and chili powder, breaking it up into smaller pieces using a spatula. Add the beans; and saute until the flavors all blend together. Season with salt and pepper to taste.
Mix together the ingredients for the mint fresca. Add sugar to taste your preference. Serve over ice if desired.
Arrange the lettuce on a plate, topped with ground beef, tortilla chips, avocado, onions, tomatoes, corn, cheese, and cilantro. Squirt some lime over top (optional). Garnish with jalapeño and sour cream (if using). Enjoy with mint fresca.
