Ingredients

  • 1/4 cup Brown rice
  • 2 tbsp Extra-virgin olive oil
  • 1/2 cup Baby carrots sliced thin
  • 2 cups Green cabbage shaved
  • 2 tbsp Onion chopped
  • 1 cloves Garlic minced
  • 1 tsp Fresh ginger minced
  • 4 oz Ground turkey
  • 1/4 cup Reduced-sodium soy sauce
  • 1 tsp Rice wine vinegar
  • 1 tsp Sesame oil
  • 4 Vegetable dumplings or potstickers
  • 4 Scallions chopped
  • Sesame seeds garnish (white and black)
  • 2 tbsp Cashews roughly chopped

Instructions

  • Cook the rice according to the directions on the package. Once the rice is cooked drain any excess water if needed. Season with salt and pepper.
  • Heat a saute pan over medium high heat. Once hot, add the oil. Saute the carrots, cabbage, onion, garlic, and ginger until the vegetables start to soften and caramelize. Crumble in the turkey, brown well while breaking it up into smaller pieces until it is no longer pink.
  • Stir in the rice, soy sauce, rice wine, and sesame oil. Saute until everything is blended together well. Season with salt and pepper to taste.
  • For the dumplings: cook according to the direction on the package.
  • Garnish the stir fry with scallions, sesame seeds, and cashews. Serve with dumplings.
