Ingredients
- 2 Scallions minced
 - 1 tbsp Dijon mustard
 - 1 tsp Fresh thyme chopped
 - 1/4 tsp Fresh ginger grated
 - 1 pound Flank steak
 - 2 cups Papaya peeled, seeded, and diced
 - 1 Avocado pitted and diced
 - 3 tbsp Honey
 - 1 tbsp Lime juice
 - 2 tbsp Extra-virgin olive oil
 
Instructions
- in a small bowl, combine the scallions, mustard, thyme, pepper and ginger. Rub the mixture evenly on both sides of the steak.
 - Mix the papaya, avocado, honey, and lime juice in a bowl. Season with salt to tatse. Cover and refrigerate until ready to use.
 - Preheat a grill or grill pan on medium heat. Lightly oil both sides of the steak and season with salt. Grill the steak to your desired temperature using a thermometer. (see below) Let the steak rest for 5 minutes on a cutting board then slice the steak across the grain.
 - Serve with papaya avocado mixture.
