Steak Papaya

Ingredients

  • 2 Scallions minced
  • 1 tbsp Dijon mustard
  • 1 tsp Fresh thyme chopped
  • 1/4 tsp Fresh ginger grated
  • 1 pound Flank steak
  • 2 cups Papaya peeled, seeded, and diced
  • 1 Avocado pitted and diced
  • 3 tbsp Honey
  • 1 tbsp Lime juice
  • 2 tbsp Extra-virgin olive oil

Instructions

  • in a small bowl, combine the scallions, mustard, thyme, pepper and ginger. Rub the mixture evenly on both sides of the steak.
  • Mix the papaya, avocado, honey, and lime juice in a bowl. Season with salt to tatse. Cover and refrigerate until ready to use.
  • Preheat a grill or grill pan on medium heat. Lightly oil both sides of the steak and season with salt. Grill the steak to your desired temperature using a thermometer. (see below) Let the steak rest for 5 minutes on a cutting board then slice the steak across the grain.
  • Serve with papaya avocado mixture.

  • Medium Rare: 125 - 130 degrees F
  • Medium: 135 - 140 degrees F
  • Medium Well: 145 - 150 degrees F
