in a small bowl, combine the scallions, mustard, thyme, pepper and ginger. Rub the mixture evenly on both sides of the steak.
Mix the papaya, avocado, honey, and lime juice in a bowl. Season with salt to tatse. Cover and refrigerate until ready to use.
Preheat a grill or grill pan on medium heat. Lightly oil both sides of the steak and season with salt. Grill the steak to your desired temperature using a thermometer. (see below) Let the steak rest for 5 minutes on a cutting board then slice the steak across the grain.
