Ingredients
- 4 tbsp Extra-virgin olive oil
- 1/4 cup Fresh parsley
- 2 tbsp Fresh mint
- 1 cloves Garlic
- 1/4 tbsp Lime juice as needed to taste
- 2 tbsp Fresh cilantro
- 1/4 tsp Red pepper flakes optional
- 8 Chicken wings about 4 to 5 wings per portion depending on size
- 1/2 tsp Garlic powder
- 1/4 tsp Paprika
- 1/2 tsp Chicken Seasoning rub your favorite chicken seasoning rub blend
- 10 Baby carrots
Instructions
- Place the olive oil (reserve 1/4 of the oil for the chicken), parsley, mint, garlic, lime juice, cilantro, in a blender or food processor and pulse until smooth. Add more lime to taste as desired. Season with salt and pepper to taste and red pepper flakes if using, then set aside. Add a little more oil if needed while blending to smooth out the sauce.
- Toss the chicken with garlic powder, paprika, seasoning rub, remaining oil, salt and pepper.
- Preheat a grill on medium heat.(Alternatively preheat the oven to 400 degrees. Cook the wings on a baking sheet in the oven until crispy to an internal temperature of 160 degrees using a thermometer0.
- Grill the wings on all sides to get a nice crispy char to an internal temperature of 160 degrees using a thermometer.
- Drizzle with sauce and serve sauce on the side with carrots.

Pro tips: Butterfly the chicken: Lay the breasts down on a cutting board, using a sharp knife parallel to the cutting board slice the breasts through the middle (carefully) all the way in half.Â
