Ingredients
- 1 tbsp Extra-virgin olive oil
- 3/4 lb Chicken breast boneless skinless sliced thin
- 1/2 tsp Ground cumin
- 1 1/2 tsp Chili powder
- 1/2 Red bell pepper diced
- 4 oz Corn
- 4 oz black beans canned drained and rinsed
- 2 oz Cream cheese cubed
- 1 tbsp Lime juice
- 4 oz Cheddar cheese shredded
- 4 Pita bread
Instructions
- In a large nonstick pan, heat the olive oil over medium heat. Add the chicken, cumin, chili powder, and peppers. Cook about 6 - 8 minutes, until the chicken is no longer pink inside.
- Stir in the corn, beans, cream cheese, and lime juice. Continue cooking and stirring until cream cheese is melted. Remove from the heat and stir in the cheddar cheese
- Place the mixture on a pita bread. Fold up and serve.
