Southwest Cream Cheese Chicken Pita

Ingredients

  • 1 tbsp Extra-virgin olive oil
  • 3/4 lb Chicken breast boneless skinless sliced thin
  • 1/2 tsp Ground cumin
  • 1 1/2 tsp Chili powder
  • 1/2 Red bell pepper diced
  • 4 oz Corn
  • 4 oz black beans canned drained and rinsed
  • 2 oz Cream cheese cubed
  • 1 tbsp Lime juice
  • 4 oz Cheddar cheese shredded
  • 4 Pita bread

Instructions

  • In a large nonstick pan, heat the olive oil over medium heat. Add the chicken, cumin, chili powder, and peppers. Cook about 6 - 8 minutes, until the chicken is no longer pink inside.
  • Stir in the corn, beans, cream cheese, and lime juice. Continue cooking and stirring until cream cheese is melted. Remove from the heat and stir in the cheddar cheese
  • Place the mixture on a pita bread. Fold up and serve.
