Ingredients
- 8 oz Penne pasta or pasta of your choice
- 2 tbsp Extra-virgin olive oil
- 1 lb Chicken breast boneless skinless sliced into 1 inch thick strips
- 1/4 cup All-purpose flour
- 1/2 Onion diced
- 1 Red bell pepper sliced
- 1 Green bell pepper sliced
- 2 cloves Garlic minced
- 1 tbsp Italian seasoning
- 4 oz Mushrooms quartered
- 1/2 cup Red wine
- 2 cups Crushed tomatoes
- 4 oz Tomato paste
- 4 oz Mozzarella cheese shredded
- 1/4 loaf Crusty bread sliced
Instructions
- Preheat the oven to 350 degrees.
- In a pot of boiling salted water cook the pasta according to the directions on the package. Drain well.
- In a nonstick pan heat the oil on medium heat. Season chicken with a pinch of salt and pepper and coat with flour. Brown chicken in the pan for 3 minutes per side, just until browned. Remove from pan and set aside.
- Add onions, peppers, garlic, italian seasoning, and mushrooms to the pan and cook until softened, about 7 to 10 minutes, stirring occasionally. Add in the wine and simmer for 1 - 2 minutes.
- Mix in the crushed tomatoes and tomato paste; stir to combine.
- Return the chicken to the pan and simmer until chicken is cooked through to an internal temperature of 160 degrees Fahrenheit, about 15 minutes.
- Mix in the pasta and sprinkle cheese over top. Place the pan in the oven to melt the cheese. Serve with crusty bread.
