Ingredients
Toast
- 4 slices Sourdough bread
- 2 tsp Extra-virgin olive oil
- 4 TBSP Goat cheese or enough to spread a thin layer over surface of bread
- 2 Avocado pitted and peeled
- 6 Grape tomatoes halved
- 6 slices Red onion sliced thin
- 6 oz Smoked salmon sliced thin
- 1 tsp Everything but the bagel seasoning
- 2 wedges Lemon optional
- Kosher salt
- Black pepper
- 1 cup Carrots peeled and cut into 3 inch long sticks
- 1/4 cup Ranch dressing
Lemon Mint Spritzer
- 24 oz Sparkling water
- 1/4 cup Lemon juice use more or less to taste
- 1/4 cup Fresh mint
- 2 tsp Sugar
Instructions
- Prep the ingredients per the instructions above.
- Lightly brush one side of the bread with olive oil and toast under the oven broiler or in a toaster oven. Spread a thin layer of goat cheese on the same side as the oil.
- Mash the avocado with a fork and season with salt and pepper to taste, then spread it on the same side of the bread as the goat cheese. Top with salmon, tomato, red onion, and everything but the bagel seasoning. Squirt a little lemon over the top if desired. Season with salt and pepper.
- Mix together the ingredients for the spritzer. Add the lemon and sugar to taste. Serve over ice if desired.
- Serve the toast with carrot sticks, ranch, and spritzer.
