Ingredients
Black Bean Dip
- 1/2 can Black beans rinsed and drained
- 1 medium Tomato quartered and stem removed
- 1 TBSP Red onion chopped
- 1 clove Garlic
- 1 TBSP Fresh cilantro
- 1 tsp Lime juice
Beef
- 8 oz Ground beef
- 1/2 tsp Onion powder
- 1/2 tsp Ground cumin
- 1/2 tsp Garlic powder
- 1/2 tsp Paprika
- 1/4 tsp Chili powder
- Salt to taste
- Black pepper to taste
TOPPINGS
- 4 oz Tortilla chips
- 1/2 cup Cheddar cheese shredded
- 1/2 cup Scallions chopped
- 1/2 cup Tomato diced small
- 1 Jalapeño pepper sliced (optional)
- 1 Avocados diced
- 2 TBSP Sour cream
Light Beer
- 24 oz Light beer cold
Instructions
- Make the bean dip: Add all the ingredients to a blender or food processor, and blend until smooth. Season with salt and pepper to taste.
- Prep toppings per the instructions above.
- Preheat the oven broiler on low.
- Make the beef: Heat a nonstick pan over medium heat. Once hot, add the ground beef, onion powder, cumin, garlic powder, paprika, and chili powder. Break up the beef into smaller pieces using a spatula. Once the beef is no longer pink, drain any excess grease. Season with salt and pepper.
- Place the tortilla chips on a baking sheet. Spoon the beef over the tortilla chips, and top with bean dip and cheese. Broil until the cheese has melted.
- Serve: Remove nachos from the oven and top with tomato, jalapeno (if using), avocado, sour cream, and scallions. Enjoy with a cold beer.
