Ingredients

Black Bean Dip

  • 1/2 can Black beans rinsed and drained
  • 1 medium Tomato quartered and stem removed
  • 1 TBSP Red onion chopped
  • 1 clove Garlic
  • 1 TBSP Fresh cilantro
  • 1 tsp Lime juice

Beef

  • 8 oz Ground beef
  • 1/2 tsp Onion powder
  • 1/2 tsp Ground cumin
  • 1/2 tsp Garlic powder
  • 1/2 tsp Paprika
  • 1/4 tsp Chili powder
  • Salt to taste
  • Black pepper to taste

TOPPINGS

  • 4 oz Tortilla chips
  • 1/2 cup Cheddar cheese shredded
  • 1/2 cup Scallions chopped
  • 1/2 cup Tomato diced small
  • 1 Jalapeño pepper sliced (optional)
  • 1 Avocados diced
  • 2 TBSP Sour cream

Light Beer

  • 24 oz Light beer cold

Instructions

  • Make the bean dip: Add all the ingredients to a blender or food processor, and blend until smooth. Season with salt and pepper to taste.
  • Prep toppings per the instructions above.
  • Preheat the oven broiler on low.
  • Make the beef: Heat a nonstick pan over medium heat. Once hot, add the ground beef, onion powder, cumin, garlic powder, paprika, and chili powder. Break up the beef into smaller pieces using a spatula. Once the beef is no longer pink, drain any excess grease. Season with salt and pepper.
  • Place the tortilla chips on a baking sheet. Spoon the beef over the tortilla chips, and top with bean dip and cheese. Broil until the cheese has melted.
  • Serve: Remove nachos from the oven and top with tomato, jalapeno (if using), avocado, sour cream, and scallions. Enjoy with a cold beer.
