Ingredients

Po' Boy Sandwich

  • 4 cups Canola oil for frying
  • 2 Sub rolls
  • 1/2 cup All-purpose flour
  • 1/2 cup Cornmeal
  • 1 tsp Paprika
  • 1/2 tsp Garlic powder
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 1/4 tsp Cayenne pepper (optional for extra heat)
  • 12 oz Shrimp peeled and deveined tail off
  • 1/2 cup Buttermilk
  • 4 TBSP Mayonnaise
  • 1 cup Lettuce shredded
  • 4 slices Tomato
  • ½ cup Pickle chips
  • 2 tsp Hot sauce (optional)
  • 1 Apple sliced

Sweet Iced Tea

  • 24 oz Iced tea cold

Instructions

  • Prep the ingredients per the instructions above.
  • Start by preparing the Po' Boy Sandwich. Heat vegetable oil in a large skillet to 375°F (190°C).
  • Cut the sub rolls in half lengthwise, creating a top and bottom portion.
  • In a shallow bowl, combine the flour, cornmeal, paprika, garlic powder, salt, black pepper, and cayenne pepper (if using).
  • Dip the shrimp in the buttermilk, allowing any excess to drip off, then coat them in the flour mixture, pressing gently to adhere.
  • Place the coated shrimp in the vegetable oil in a single layer. Cook for about 2-3 minutes per side until the shrimp are crispy and golden brown. You may need to cook them in batches depending on the size of your skillet. Transfer the fried shrimp to a paper towel-lined plate to drain excess oil.
  • Assemble the Po' Boy Sandwiches by spreading mayonnaise on the cut sides of the rolls. Layer lettuce leaves, tomato slices, pickles, and crispy fried shrimp.
  • Optional: Drizzle some hot sauce over the shrimp for added heat.
  • Serve the Po' Boy Sandwiches with sliced apple and sweet iced tea.
