Ingredients
- 8 oz New York strip steak
- 1/4 tbsp Steak seasoning your favorite steak seasoning blend
- 1 tbsp Extra-virgin olive oil
- 2 tbsp Butter
- 2 clove Garlic
- 4 sprigs Fresh thyme use some for garnish
- 2 Crusty bread toasted
Avocado Mousse
- 1/2 Avocado Pitted
- 1/4 tsp Lime juice as needed
- 1 tsp Fresh mint
Instructions
- Season the steak on both sides with steak seasoning, salt and pepper. Set aside for 10 minutes.
- Add the avocado, lime juice, and mint to a food processor or blender. Season with salt and pepper. Blend until very smooth. Season with salt and pepper to taste. Refrigerate until plating.(alternatively, mash the avocado with a fork until smooth then mix with the remaining ingredients).
- Heat a skillet or nonstick pan on medium to medium low heat. Once the pan is hot add the oil to the pan. Sear the steak on all sides to get a nice crusty char. Add the butter, garlic cloves and thyme, cook the steak to your desired temperature using a thermometer (See notes below) while basting the top of the steak with the butter. Once the garlic is golden brown place it on top of the steak as you continue to baste with butter. Once cooked to your liking set aside to rest for 5 to 10 minutes.
- Trim the fat off the sides before slicing (if desired). Slice the steak against the grain. Spoon some of the butter from the pan over top. Garnish with thyme and garlic cloves from the pan. Serve with bread and avocado mousse.

Steak Internal Temperatures:
- Rare: 115 - 120 degrees F
- Medium Rare: 125 - 130 degrees F
- Medium: 135 - 140 degrees F
- Medium Well: 145 - 150 degrees F
- Well Done: 160 degrees F
