Ingredients

  • 2 tbsp Extra-virgin olive oil
  • 1 stalk Celery diced
  • 1 Carrot peeled and chopped
  • 1 cup Mushrooms quartered
  • 2 cloves Garlic minced
  • 2 tbsp Red onion diced
  • 3/4 lb Italian turkey sausage links chopped
  • 4 cups Chicken broth
  • 2 medium Potatoes peeled and diced
  • 2 cups Kale stem removed and leaf chopped
  • 4 Dinner rolls
  • 4 tbsp Fresh parsley chopped

Instructions

  • Heat the oil in a pot over medium heat. Once hot, sauté the celery, carrots, mushrooms, garlic, and onion until soft (about 6 to 8 minutes). Add in the turkey sausage and saute for 2 to 3 minutes more.
  • Add the chicken broth, potatoes, and kale. Season well with salt and pepper, then bring to a simmer covered with a lid.
  • Simmer for about 30 minutes. Check the tenderness of the potatoes to make sure they are soft. Taste and adjust the seasoning with salt and pepper if needed.
  • Serve with bread and garnish with parsley.
