Ingredients

  • 4 tbsp Extra-virgin olive oil
  • 2 medium Potatoes peeled and diced small
  • 1/2 Onion diced
  • 1/2 Green bell pepper seeded and diced
  • 6 oz Chicken sausage links diced
  • 8 Eggs
  • 4 slices Sourdough bread toasted (or bread of your choice)
  • 2 cups Grapes (Check the Fall Fruit guide to substitute seasonal fruits)

Instructions

  • Heat half of the oil in a non-stick pan over low-medium heat. Add in the potatoes and sauté for 6 to 8 minutes or until you get a nice golden brown on all sides. Add the onion and peppers, sauté for a further 2 to 4 minutes more. Add in the chicken sausage and brown. Check to make sure the potatoes are tender. Season with salt and pepper.
  • Once the potatoes are almost done cooking. Heat the remaining oil in a non-stick pan. Crack the eggs on a flat surface and into the pan. Cook until the whites of the eggs start to set and become firm about 3 to 5 minutes. Gently flip the eggs over and cook for an additional 1 minute. Season with salt and pepper.
  • Toast the bread.
  • Serve the home fries with eggs, toast, and grapes.
