Ingredients
- 6 oz Ground sausage
- 4 tsp Extra-virgin olive oil
- 8 Eggs
- 8 slices Sourdough bread lightly toasted
- 8 slices Tomato
- 4 oz Provolone cheese
- 2 Apples sliced (Check the Fall Fruit guide to substitute seasonal fruits)
Instructions
- Preheat the oven to 350°F.
- Form the ground sausage into flat patties. In a non-stick pan over medium heat, cook the sausage for 2 to 3 minutes on each side, or until cooked through, then set aside.
- Add the oil in a non-stick pan over medium heat. Crack the eggs into the pan; cook until the whites are nearly set, break the yolks, and gently flip over with a spatula. Cook for 30 seconds more.
- Lightly toast the bread.
- Place the tomato seasoned with salt and pepper on the bread. Top with sausage, cheese, and eggs; Place the sandwich on a baking sheet and bake in the oven for about 3 to 5 minutes or until the cheese is melted. Cut in half and serve with a side of sliced apples.
