Ingredients
Omelet
- 1 TBSP Butter
- 4 oz Breakfast sausage links chopped
- 1/4 cup Onion diced small
- 1/4 cup Green bell pepper diced small
- 4 Eggs beaten
- 1/2 cup Cheddar cheese shredded
Small Coffee
- Coffee
- Your choice of creamer
- Your choice of sweetener
Cinnamon Sugar Toast
- 1 tsp Ground cinnamon
- 1 tsp Granulated sugar
- 2 slices Sourdough bread toasted and buttered
- 2 tsp Butter
Beverage
- 16 oz Orange juice cold
Instructions
- Preheat the oven broiler on low.
- Prep the ingredients per the instructions above.
- Make omelet: Heat a non-stick pan over medium heat. Once hot, add the butter. Saute the sausage, onion, and pepper until softened and golden brown. Pour in the eggs and reduce the heat to low. Use a spatula to pull the cooked eggs into the center, letting the liquid egg fill the space behind it. Continue going around the pan, pulling the eggs toward the center until the eggs are nearly set. Sprinkle cheese over the egg and transfer the pan under the oven broiler to melt the cheese.
- Brew and prepare the coffee to your liking.
- Fold the omelet in half.
- Make toast: Mix the cinnamon and sugar in a bowl. Toast the bread in a toaster oven. Spread the butter on the toast, then sprinkle with cinnamon sugar.
- Serve: Enjoy the omelet with coffee, toast, and orange juice.
