Sausage and Pepper Scrambled Eggs

Ingredients

Fresh Squeezed OJ

  • 10 to 12 Oranges refrigerated

Home Fries

  • 2 cups Potatoes peeled and diced small
  • 1 TBSP Extra-virgin olive oil
  • 1/2 tsp Paprika
  • 1/4 tsp Onion powder
  • 1/2 tsp Garlic powder
  • 4 TBSP Ketchup optional

Seasoning

  • Salt
  • Black pepper

Eggs

  • 2 tsp Extra-virgin olive oil
  • 1/4 cup Green bell pepper diced small
  • 4 oz Breakfast sausage links chopped
  • 1 TBSP Butter
  • 4 Eggs beaten
  • 2 English muffin toasted
  • 4 tsp Butter
  • 2 TBSP Strawberry jam
  • Hot sauce optional

Instructions

  • Prep the ingredients per the instructions above.
  • Parboil the potatoes: Bring a pot of salted water to a boil. Add the potatoes and simmer until tender (a fork easily slides in and out), about 10 to 15 minutes, then drain well.
  • Cook the potatoes: Heat the oil in a skillet on medium heat. Saute the potatoes, garlic powder, onion powder, salt, and pepper. Saute until you get a nice golden brown color on the potatoes.
  • Make the eggs: Heat the oil in a nonstick pan on medium heat. Saute the pepper until softened, then add the sausage and saute until nicely browned. Add the butter and eggs to the pan and lower the heat to medium-low. Move the eggs around the pan until fluffed up and cooked through. Season with salt and pepper to taste.
  • Toast the English muffins. Spread with butter, then spread with jam.
  • Serve: Enjoy the eggs with home fries, English muffin, and orange juice. Serve with hot sauce and ketchup if desired.
