Ingredients

Salmon

  • 1/2 lb Salmon skinless (cut into 2-inch pieces)
  • 1 TBSP Brown sugar
  • 1/4 cup Reduced-sodium soy sauce
  • 2 cloves Garlic minced
  • 1/2 TBSP Fresh ginger grated
  • 1/2 TBSP Extra-virgin olive oil

Wasabi Mayo

  • 1/4 cup Mayonnaise
  • 1/2 TBSP Wasabi paste
  • 1/2 TBSP Lemon juice

Broccoli

  • 1 TBSP Extra-virgin olive oil
  • 3/4 lb Broccoli cut into florets
  • 1/4 tsp Kosher salt
  • ½ cup Cheddar cheese shredded

Garlic bread

  • 2 slices Crusty bread
  • 2 TBSP Butter
  • 2 cloves Garlic minced

Sparkling Water

  • 24 oz Sparkling water
  • 1 Lemon sliced

Bananas foster

  • 2 TBSP Butter
  • 1/4 cup Brown sugar
  • 1/4 cup Heavy cream
  • 2 Bananas peeled
  • 1/4 cup Walnuts chopped
  • 1/4 cup Dark rum
  • dash Ground cinnamon
  • 2 cups Vanilla ice cream for serving

Instructions

  • Prepare the ingredients per the instructions above.
  • Mix brown sugar, soy sauce, garlic, and ginger in a medium-sized bowl. Toss salmon pieces in the same bowl along with sauce and allow to marinate for at least 30 minutes.
  • In a small bowl, whisk the mayo, wasabi paste and lemon juice until smooth.
  • In a large skillet, heat the oil over medium-high heat. Thread the salmon pieces onto skewers and place the salmon skewers into the pan. Allow to sear without moving them, about 2 minutes. Flip them over and sear them for two minutes on the other side. This may need to be done in batches depending on the size of your pan.
  • Add the olive oil to a large skillet and heat it on medium-high heat. Add broccoli and salt. Cook for 3 to 4 minutes until starting to brown, stirring occasionally.
  • Sprinkle the cheese over the broccoli. Add 1/4 cup water to the bottom of the skillet and cover with a lid. Cook another 1 minute until the cheese is melted and the water cooks out.
  • Toast the bread then spread with butter and garlic.
  • Mix the sparkling water with lemon.
  • Serve the salmon with sauce, broccoli, garlic bread, and sparkling water.
  • For dessert: Melt the butter in a heavy skillet over medium-high heat. Add the brown sugar. Stir together and cook for a minute or two. Pour in the cream and stir it around to combine.
  • Peel the bananas and slice them. Drop the slices into the pan. Next, add the chopped nuts and stir them into the sauce. Remove the pan from the heat, then stir in the rum. Carefully return the pan to the heat. Let it start to bubble, and then carefully use a long lighter to ignite it. (Be sure to have a lid handy in case you need to extinguish the flame.) Let the fire burn and go out (it'll only take about 30 seconds or so), and then stir in the cinnamon at the end. You may also cook the mixture without rum.
  • Spoon it over a couple of scoops of vanilla ice cream and enjoy immediately.
