Roast Pork with Sweet Potato and Cabbage

Ingredients

  • 1 lb sweet potatoes cut into 1/2-inch chunks
  • 2 tbsp. Extra-virgin olive oil
  • 3/4 lb Pork tenderloin
  • 1 tsp Garlic powder
  • 1 tsp Chili powder
  • 1 tsp Cajun seasoning
  • 1 tsp Lime zest
  • 1/2 Red cabbage thinly sliced
  • 3 green onions thinly sliced
  • 1 Jalapeño pepper thinly sliced
  • 1/8 cup Apple cider vinegar
  • 1/4 cup chicken broth

Instructions

  • On large rimmed baking sheet, toss sweet potatoes with 1 tablespoon olive oil and 1/4 teaspoon salt; roast in a 400 degrees F oven 30 minutes.
  • Season pork with garlic powder, chili powder, lime zest, and cajun seasoning.
  • In deep 12-inch skillet, heat 1 tablespoon olive oil on medium-high. Season pork tenderloin with 1/4 teaspoon each salt and pepper. Brown pork on all sides; transfer to baking sheet with potatoes. Roast 16 minutes or until an internal temperature of 135° is achieved.
  • To same skillet on medium, add red cabbage, green onions, jalapeno and 1/2 teaspoon salt. Stir in cider vinegar and broth. Cook 12 minutes or until cabbage is tender, stirring.
  • Slice pork and serve over potatoes and cabbage.
