Rice Pudding

Ingredients

  • 1/2 cup Jasmine rice
  • 2 cups Milk
  • 2.5 tbsp Granulated sugar plus more as needed
  • Pinch Kosher salt
  • 3/4 tsp Vanilla extract
  • 1/2 tbsp Butter
  • 1/2 cup Raisins
  • 1/4 tsp Ground cinnamon

Instructions

  • Measure out the rice and milk. Place rice in a large saucepan. Add the milk, sugar, and salt.
  • Bring to a boil over medium-high heat, stirring frequently and scraping the bottom of the pan with a wooden spoon or rubber spatula so that the rice does not stick.
  • Reduce the heat to a low simmer and cook uncovered, stirring occasionally, until the rice is very tender and the mixture starts to thicken, about 20 minutes.
  • Remove from the heat and stir in vanilla extract and butter. Taste and add more sugar as desired. Place into a container and refrigerate to cool or serve warm.
  • Top with raisins and cinnamon before serving.
