Ingredients

  • 1/4 cup Quinoa rinsed
  • 2 tbsp Corn
  • 1 tbsp Red onion minced
  • 1 tbsp Extra-virgin olive oil
  • 1/2 tsp Red wine vinegar
  • 1 cloves Garlic grated
  • 2 tbsp Fresh cilantro chopped

Instructions

  • Rinse the quinoa under cold water and drain well. Cook the quinoa according to the instructions on the package. Then stir in the corn and onion, set aside to cool.
  • In a bowl, whisk the olive oil, vinegar, garlic, and season with salt and pepper. Then mix it into the quinoa.
  • Garnish with cilantro.
