Ingredients
- 1/4 cup Quinoa rinsed
- 2 tbsp Corn
- 1 tbsp Red onion minced
- 1 tbsp Extra-virgin olive oil
- 1/2 tsp Red wine vinegar
- 1 cloves Garlic grated
- 2 tbsp Fresh cilantro chopped
Instructions
- Rinse the quinoa under cold water and drain well. Cook the quinoa according to the instructions on the package. Then stir in the corn and onion, set aside to cool.
- In a bowl, whisk the olive oil, vinegar, garlic, and season with salt and pepper. Then mix it into the quinoa.
- Garnish with cilantro.
