Ingredients
- 3/4 cup Quinoa
Dressing
- 4 tbsp Extra-virgin olive oil
- 1 tbsp Lemon juice
- 1/2 tbsp Apple cider vinegar
- 2 cloves Garlic grated
- 1 tbsp Dijon mustard chopped
Sausage
- 1/2 lb Smoked Turkey Sausage Links
- 2 Pita bread
- 2 cups Romaine lettuce shredded
- 1 cup Grape tomatoes halved
- 1/2 cup Black olives halved
- 1 cup Cucumber chopped
- 1 Avocados pitted and diced
Instructions
- Preheat the oven to 375 degrees. Place the smoked sausage on a foil lined baking sheet. Cook in the oven to get a brown crispy outside. Then set aside. Chop before using.(Smoked sausage is already cooked so it does not have to cook to a certain temperature).
- In a pot of salted boiling water, cook the quinoa according to the instructions on the package. Once cooked, drain any excess water. Season with salt to taste. Cover with a lid to keep warm.
- Whisk all of the ingredients for the dressing in a bowl. Season with salt and pepper to taste. Then set aside.
- Heat a nonstick pan on medium heat. Warm the pita on both sides. Then cut into wedges.
- Place the quinoa in a bowl, top with lettuce, tomato, olives, cucumber, avocado, and sausage. Spoon the dressing over top (be careful not to over dress). Serve with pita bread.
