Ingredients
- 8 Eggs scrambled
- 8 tbsp Crushed tomatoes
- 2 tbsp Extra-virgin olive oil
- 1/2 tsp Dried basil
- 1/2 tsp Dried oregano
- 6 oz Chicken sausage links sliced thin
- 4 oz Mozzarella cheese shredded
- 2 cups Blackberries
- 4 slices Multigrain bread toasted
Instructions
- Preheat the oven broiler to low medium heat.
- Heat the oil in an oven safe nonstick pan or cast iron skillet on medium heat, add the egg to the pan.
- Cook the egg for 3 to 5 minutes or until eggs are partially set; place the pan under the broiler for 2 to 3 minutes or until the top begins to set. Spread the crushed tomato on top of the egg with oregano, basil, and a pinch of salt and pepper and top with mozzarella cheese and chicken sausage.
- Toast the bread.
- Place the pan back underneath the broiler for 3 - 5 minutes or until the cheese is melted and the eggs are cooked through. Cut into wedges and serve with toast and grapes.
