Heat the oil in an oven safe nonstick pan or cast iron skillet on medium heat, add the egg to the pan.
Cook the egg for 3 to 5 minutes or until eggs are partially set; place the pan under the broiler for 2 to 3 minutes or until the top begins to set. Spread the crushed tomato on top of the egg with oregano, basil, and a pinch of salt and pepper and top with mozzarella cheese and chicken sausage.
Toast the bread.
Place the pan back underneath the broiler for 3 - 5 minutes or until the cheese is melted and the eggs are cooked through. Cut into wedges and serve with toast and grapes.
