Pizza Frittata

Ingredients

  • 8 Eggs scrambled
  • 8 tbsp Crushed tomatoes
  • 2 tbsp Extra-virgin olive oil
  • 1/2 tsp Dried basil
  • 1/2 tsp Dried oregano
  • 6 oz Chicken sausage links sliced thin
  • 4 oz Mozzarella cheese shredded
  • 2 cups Blackberries
  • 4 slices Multigrain bread toasted

Instructions

  • Preheat the oven broiler to low medium heat.
  • Heat the oil in an oven safe nonstick pan or cast iron skillet on medium heat, add the egg to the pan.
  • Cook the egg for 3 to 5 ­minutes or until eggs are partially set; place the pan under the broiler for 2 to 3 minutes or until the top begins to set. Spread the crushed tomato on top of the egg with oregano, basil, and a pinch of salt and pepper and top with mozzarella cheese and chicken sausage.
  • Toast the bread.
  • Place the pan back underneath the broiler for 3 - 5 minutes or until the cheese is melted and the eggs are cooked through. Cut into wedges and serve with toast and grapes.
