Ingredients
- 1 Peach peeled and chopped small
- 2 tbsp Honey
- 1/2 cup Tomato chopped small
- 1/4 cup Red onion minced
- 1 clove Garlic minced
- 1 tbsp Jalapeño pepper chopped (optional)
- 1 tsp Apple cider vinegar
- 1 tsp Lime juice
- 2 tbsp Fresh cilantro chopped
- 2 oz Blue Corn Chips or your choice of tortilla chips
Instructions
- Add the peach, honey, tomato, onion, garlic, and jalapeno (if using) to a saucepan over medium low heat. Bring to a low simmer until everything softens. (Add a tablespoon of water as needed to add moisture)
- Once soft, remove from the heat. Stir in vinegar and lime juice. Season with salt and pepper to taste. Refrigerate until cooled. Stir in cilantro and serve with chips.
