Ingredients
- 1/2 cup Water
- 4 tbsp Brown sugar
- 2 Peaches pitted and sliced
- 1/2 tsp Ground cinnamon
- 6 oz Chicken sausage links sliced
Waffles - or store bought waffles
- 2 cups All-purpose flour
- 2 tbsp Baking powder
- 1.5 tbsp Sugar
- 2 cups Milk
- 2 Eggs
- 2 tbsp Butter melted
- 1 tsp Vanilla extract
- 4 tbsp Mascarpone cheese
- 2 tbsp Fresh mint whole leaves
Instructions
- In a nonstick pan over medium heat add the water, brown sugar, peaches, and cinnamon; simmer until the peaches become soft and the liquid becomes a thick syrup.
- In the meantime, preheat the waffle maker. Combine the flour, baking powder, sugar, and a pinch of salt in a bowl. Add the milk and the eggs. Whisk to combine. Pour the melted butter and the vanilla into the batter and whisk until mostly smooth.
- Pour the mixture into the hot waffle maker and cook according to the manufacturer’s directions.
- In a nonstick pan over medium heat brown the chicken sausage on both sides.
- Spoon the peach syrup over the waffles and top with a dollop of mascarpone cheese. Garnish with mint. Serve with chicken sausage.
