In a nonstick pan over medium heat add the water, brown sugar, peaches, and cinnamon; simmer until the peaches become soft and the liquid becomes a thick syrup.
In the meantime, preheat the waffle maker. Combine the flour, baking powder, sugar, and a pinch of salt in a bowl. Add the milk and the eggs. Whisk to combine. Pour the melted butter and the vanilla into the batter and whisk until mostly smooth.
Pour the mixture into the hot waffle maker and cook according to the manufacturer’s directions.
In a nonstick pan over medium heat brown the chicken sausage on both sides.
Spoon the peach syrup over the waffles and top with a dollop of mascarpone cheese. Garnish with mint. Serve with chicken sausage.
