Ingredients

Salad

  • 4 oz Rotini pasta
  • 2 TBSP Red onion diced small
  • 1/4 cup Cucumber sliced then quartered
  • 1/4 cup Assorted olives halved (fresh from olive bar)
  • 1/4 cup Fresh mozzarella diced small
  • 3 oz Salami chopped
  • 1.5 cups Arugula
  • 1/2 cup Grape tomatoes halved

Vinaigrette

  • 3 TBSP Extra-virgin olive oil
  • 1 TBSP Red wine vinegar
  • 1/2 tsp Dijon mustard
  • 1/4 tsp Dried oregano
  • 1/4 tsp Garlic powder

Seasoning

  • Salt
  • Black pepper

Bread and Butter

  • 2 slices Crusty bread toasted
  • 4 tsp Butter

Beverage

  • 24 oz Sparkling water cold

Instructions

  • In a pot of salted boiling water, cook the pasta according to the instructions on the package.
  • While the pasta is cooking, prep the ingredients per the instructions above.
  • In a bowl, whisk together the ingredients for the vinaigrette until fully combined. Season to taste with salt and pepper.
  • Once the pasta is cooked, drain well, then lay it out on a baking sheet to cool completely.
  • Make the pasta salad: Transfer the pasta to a bowl along with the rest of the pasta salad ingredients and toss with the vinaigrette. Season with salt and pepper to taste.
  • Toast the bread then spread it with butter.
  • Serve: Enjoy the pasta salad with bread and sparkling water.
