Ingredients
- 4 oz Girelle pasta or any small pasta of your choice
- 4 oz Italian sausage
- 1 tbsp Extra-virgin olive oil
- 2 tbsp Red onion minced
- 3 Cloves Garlic minced
- 1/2 cup Chicken broth
- 2 tbsp Tomato paste
- 1/4 cup Heavy Cream
- 1/2 cup Green Peas
- 1 tbsp Parmesan cheese grated, plus more for garnish
- 1/2 tsp Red pepper flakes optional
- 1 tbsp Fresh parsley garnish
- 2 slices Crusty bread toasted
Instructions
- Bring a large pot of salted water to a boil. Cook the pasta according to package directions. Reserve about 1/2 to 1 cup of the pasta water and drain the pasta well.
- Preheat the oven to 400 degrees. Cook the sausage to an internal temperature of 150 degrees using a thermometer, rotating periodically throughout cooking, to nicely brown all over. Set aside to rest, slice before using.
- Heat a large skillet or saute pan over medium heat. Once hot, add the oil. Saute the onion and garlic until it starts to turn golden brown.
- Stir in the broth, tomato paste, and cream. Bring to a simmer until the sauce reduces to a creamy consistency. Stir in the peas. Season with salt and pepper.(If the sauce needs to be thinned out stir in a tablespoon or two of pasta water as needed. Once the sauce is creamy adjust the seasoning to taste. Then remove from the heat).
- Stir in the parmesan cheese and pasta into the sauce. Serve immediately so the pasta doesn't soak up all of the sauce. Top with sausage.
- Garnish with parmesan, red pepper flakes, and parsley. Serve with bread.
