Ingredients
- 8 oz Orecchiette pasta or any small pasta of your choice
- 1 tbsp Extra-virgin olive oil
- 1/4 cup Red onion minced
- 3 Cloves Garlic minced
- 2 tbsp Vodka optional
- 1/2 lb Ground beef
- 1/4 cup Tomato paste
- 1/2 tsp Red pepper flakes optional
- 1 cup Heavy Cream
- 1 cup Green Peas
- 1/4 cup Parmesan cheese grated
- 1 tbsp Fresh parsley garnish
- 4 slices Crusty bread toasted
Instructions
- Bring a large pot of salted water to a boil. Once you are about 3/4 of the way done with the meal cook the pasta according to package directions. Reserve about 1/2 to 1 cup of the pasta water and drain the pasta well.
- Heat a large skillet or saute pan over medium heat. Once hot, add the oil and onion. Saute until it starts to turn golden brown, then add the garlic and saute to golden brown. Add in the vodka (if using) and simmer until it mostly evaporates. (if using a gas stove remove the pan away from the flame before adding the vodka in case it flares up).
- Then crumble in the beef. Nicely brown the beef while crumbling into smaller pieces. Once browned, drain excess fat from the pan.
- Stir in the tomato paste, red pepper flakes, and season with salt and pepper. Turn the heat to low and add the cream to the skillet. Bring to a simmer and add in the peas.
- If the sauce needs to be thinned out stir in the reserved pasta water as needed. Once the sauce is creamy adjust the seasoning to taste. Then remove from the heat.
- Stir in half of the parmesan cheese and pasta into the sauce. Serve immediately so the pasta doesn't soak up all of the sauce.
- Garnish with remaining parmesan and parsely. Serve with bread.
