Ingredients
- 3 Tbsp Extra-virgin olive oil
- 6 oz Chicken sausage links diced
- 2 tbsp Red onion diced
- 4 tbsp Green bell pepper diced
- 8 Eggs
- 4 slices Watermelon
Instructions
- Add 1/3 of the oil to a nonstick pan on medium heat. Brown the chicken sausage, onion, and pepper.
- Heat oil in a nonstick pan on medium heat. Once the pan is hot crack the eggs on a flat surface and into the pan being careful not to break the yolks.
- Cook the eggs till the whites are mostly firm about 2 - 3 minutes, and gently flip the eggs with a spatula and cook for 30 seconds more. Season with salt and pepper.
- Serve with watermelon.
