One Pot Creamy Chicken and Cauliflower

Ingredients

Chicken and Cauliflower

  • 1/2 TBSP Extra-virgin olive oil
  • 1/4 Yellow onion diced
  • 1 clove Garlic minced
  • 4 oz Cauliflower cut into florets
  • 6 oz Roasted red peppers drained and chopped
  • 8 oz Chicken breast boneless skinless
  • 3/4 tsp Paprika (add more for color if desired)
  • 1/2 tsp Dried oregano
  • 3/4 tsp Salt
  • 1/4 tsp Black pepper
  • Red pepper flakes to taste
  • 1 cup Chicken broth plus more as needed
  • 1/2 cup Baby spinach chopped
  • 1/4 cup Feta cheese crumbled
  • 4 oz Cream cheese
  • 1/2 Lemon juiced
  • 2 Naan bread

Apple Juice

  • 24 oz Apple juice cold

Instructions

  • Heat a large pot over medium heat with olive oil. Add onions and garlic and sauté for 3 minutes.
  • Add cauliflower, red peppers, chicken, seasonings, and broth. Add more broth as needed until everything is fully covered. Bring to a simmer; cover with a lid and simmer for 10 - 15 minutes, or until chicken is cooked through to 165°F (74°C).
  • Remove chicken and shred with forks.
  • Return chicken to pot along with spinach, feta, cream cheese, and lemon juice. Simmer for 5 - 10 more minutes to allow liquid to thicken a bit.
  • Portion into bowls. Serve and enjoy with naan and glasses of cold apple juice.
