Ingredients
Chips and Salsa
- 1 large Tomato quartered and stem removed
- 1 TBSP Red onion rough chop
- 1 clove Garlic
- 1/4 tsp Lime juice to taste
- 1/2 TBSP Extra-virgin olive oil
- 1 TBSP Fresh cilantro
- 1/2 Jalapeño pepper optional
- 2 oz Tortilla chips
Tacos
- 8 oz Ground beef
- 1.5 TBSP Taco seasoning or make your own homemade taco seasoning blend (see notes below)
- 6 Street Taco Shells
- 1/2 cup Monterey jack cheese Shredded
- 1/2 cup Romaine lettuce shredded
- 1/3 cup Tomato diced small
- 2 TBSP Red onion diced small
- 2 TBSP Sour cream optional
Fruit Punch
- 16 oz Fruit punch cold
Instructions
- Make the salsa: Prep salsa ingredients per the instructions above. Place all the ingredients (except the tortilla chips) in a food processor or blender and pulse until blended (serve chunky or smooth). Season with salt and pepper to taste. Reserve in the fridge until you are ready to serve.
- Prepare the taco ingredients per the instructions above.
- Heat a non-stick pan over medium heat. Once hot, crumble in the beef and brown well while breaking it up into smaller pieces until no longer pink. Stir in the taco seasoning until fully combined. Season with salt to taste. Then set aside.
- Meanwhile, warm the taco shells in a nonstick pan over medium heat on both sides until soft and pliable.
- Spoon the ground beef onto the taco shells, and top with cheese, lettuce, tomato, and onion. Serve with sour cream, chips and salsa, and fruit punch.
Notes
Make your own Taco Seasoning - Mix all ingredients together in a bowl (use what you need in the recipe to taste, save the rest in a sealed container for future use)

- 1/2 teaspoon garlic powder
- 1 teaspoon paprika
- 1/4 teaspoon oregano
- 1/4 teaspoon of cajun seasoning
- 1/4 teaspoon salt
