Make the salsa: Prep salsa ingredients per the instructions above. Place all the ingredients (except the tortilla chips) in a food processor or blender and pulse until blended (serve chunky or smooth). Season with salt and pepper to taste. Reserve in the fridge until you are ready to serve.
Prepare the taco ingredients per the instructions above.
Heat a non-stick pan over medium heat. Once hot, crumble in the beef and brown well while breaking it up into smaller pieces until no longer pink. Stir in the taco seasoning until fully combined. Season with salt to taste. Then set aside.
Meanwhile, warm the taco shells in a nonstick pan over medium heat on both sides until soft and pliable.
Spoon the ground beef onto the taco shells, and top with cheese, lettuce, tomato, and onion. Serve with sour cream, chips and salsa, and fruit punch.
