Ingredients
- 4 oz Rotini pasta
- 2 slices Baguette toasted
- 2 TBSP Red onion diced small
- 1/4 cup Cucumber sliced then quartered
- 1/4 cup Assorted olives halved (fresh from olive bar)
- 3 TBSP Feta cheese block feta in brine crumbled (not pre crumbled)
- 2 cup Arugula
- 1/2 cup Grape tomatoes halved
- 4 oz Hard Salami diced
- 2 slices Crusty bread toasted
Vinaigrette
- 3 TBSP Extra-virgin olive oil
- 1 TBSP Red wine vinegar
- 1/2 tsp Dijon mustard
- 1/4 tsp Dried oregano
- 1/4 tsp Garlic powder
Beverage
- 24 oz Sparkling water cold
Instructions
- In a pot of salted boiling water, cook the pasta according to the instructions on the package. While the pasta is cooking, prep the ingredients and make the vinaigrette.
- Prep the Mediterranean pasta salad ingredients per instruction above.
- In a bowl, whisk together the ingredients for the vinaigrette until fully combined. Season to taste with salt and pepper.
- Once the pasta is cooked, drain well, then lay out on a baking sheet to cool completely. While the pasta is cooling, toast the baguette.
- Make the Mediterranean pasta salad: Transfer the pasta to a bowl along with the rest of the antipasto salad ingredients (except baguette) and pour in the vinaigrette. Season with salt and pepper to taste.
- Serve: Enjoy the Mediterranean pasta salad with bread and sparkling water.
