Ingredients
Meatloaf Patties
- 8 oz Ground beef
- 1/4 cup Onion diced
- 1/2 Egg lightly beaten
- 1/4 cup Saltine crackers broken into crumbs or substitute with bread crumbs
- 1/2 tsp Dried oregano
- 1/2 tsp Garlic powder
- 3 TBSP Ketchup divided
- 1/2 tsp Kosher salt
- 1/8 tsp Black pepper
- 1.5 TBSP Brown sugar
- 2 tsp Extra-virgin olive oil
- 1/4 cup Lingonberry jam for serving
Mashed Potatoes
- 2 Potatoes medium, peeled and diced
- 2 TBSP Butter
- 1/4 cup Milk (or as needed)
- Salt to taste
- Black pepper to taste
Green Beans
- 1 cup Green beans trimmed and halved
- Salt for boiling water
Milk
- 24 oz Milk cold
Instructions
- Prep all ingredients per instructions above.
- Meatloaf Patties: In a large bowl, combine ground beef, diced onion, egg, saltine cracker crumbs, dried oregano, garlic powder, ⅔ of the ketchup, kosher salt, and black pepper. Mix together by hand and shape into individual patties.
- In a small bowl, make the topping by combining 1/3 of the ketchup and the brown sugar. Stir until smooth.
- Heat a large cast-iron skillet over medium heat. Add a drizzle of oil. Carefully place each meatloaf patty into the skillet and cook for about 5 - 7 minutes until nicely browned on the bottom. Flip and cook the other side.
- Immediately top each patty with the brown sugar ketchup topping while cooking for another 5 minutes on the other side.
- When the meatloaf patties are no longer pink in the center, remove from the skillet and let rest for 5 minutes.
- Mashed Potatoes: While the patties are resting, peel and dice the potatoes. Boil them until tender.
- Mash the boiled potatoes with butter, milk, salt, and pepper to taste.
- Green Beans: Trim and halve the green beans. Boil them in salted water until they are tender yet still crisp.
- Serve the meatloaf patties with a side of mashed potatoes and green beans.Optionally, serve with lingonberry jam on the side. Pour glasses of milk to complement the meal.
Notes
If you don't have saltine crackers, substitute an equal amount of bread crumbs.
Alternatively, you could bake the meatloaf patties on a lightly greased baking sheet at 375°F (190°C) for 20 minutes or until cooked through.
