Maple Plum Pistachio Oatmeal

Ingredients

  • 4 oz Chicken sausage links
  • 1 Plums sliced
  • 2 tbsp Maple syrup
  • 1 cup Rolled oats
  • 2 cups Water
  • 1 tsp Vanilla extract
  • 1/4 cup Greek yogurt
  • 1 Mandarin Orange peeled , sectioned, and cut into bite sized pieces
  • 1 tbsp Pistachio nuts chopped
  • 2 tsp Sweetened coconut flakes

Instructions

  • For the sausage: cook in a 400 degree oven to an internal temperature of 155 degrees using a thermometer.
  • Add the plum and maple syrup to a saucepan over medium low heat. Cook until the plum becomes tender. Then remove from the heat.
  • Cook the oats in salted boiling water according to the instructions on the package. Once done, drain excess water if needed. Stir in vanilla.
  • Portion and top with plum, yogurt, orange, pistachio, and coconut. Drizzle a little of the maple syrup from the saucepan. Serve with chicken sausage..
